WIAW #2

Well since people were sooo extremely supportive of me jumping on the WIAW bandwagon with them, I'm here to do round two!

So let's get going!

Breakfast = Greek yogurt with Barlean's lemon smoothie oil (awesome stuff!), with strawberries, some orange pieces, and raisin bread

Dinner = turkey, steamed veggies and mashed taters
oh and of course a side of fruit! 
...please take notice of the "couple" of peanut butter cups we 'obtained'

Snack #1 = peanut butter and raisins on celery... and if you think I just licked off the peanut butter and raisins and left the celery you'd be right 
:/
I can't help it - I just can not take celery!

Snack #2 = graham crackers and apple slices with lemon pudding... I've been pretty into pudding these days! 

Supper = toast with peanut butter, topped with bananas and strawberries and then drizzled in honey :)

Snack #3 = If you're wondering what in the #!*?@ this is... just look here
p.s. I don't actually cuss - ever. 

Well that's all - hope your day is spectacular! Mine will be filled with packing, packing and packing... oh ya-maybe studying for finals? But probably not. Oh well!

Attune Foods - Cereal LOVE

Cereal.
Quick, easy to prepare, delicious, satisfying.
What's left to say? It's the perfect meal.... but is there evil lurking? 
Let's take a look-see!
Hmm... 50+% of its weight is sugar? Cool.
NOT!

Alright alright, so point made-not all cereal is the 'perfect' fuel for your body.
But not all cereal is made to sabotage your attempts at living a healthy life.
Enter, Attune Foods
That's their theory, and I like it!

So they were kind enough to allow me to sample some of their products and let you wonderful readers know my thoughts

I was sent
And

Raisin Bran = SUCCESS! 
Why? Well, aside from being tasty, just the right amount of sweetness from the raisins, it also has AMAZING nutritional stats..
Check it-
Yeah Buddy! See that? The sugar? No? 
OH WAIT! That's because there isn't any!
I get soooo annoyed when cereal companies think it is necessary to add sugar... like for reals?! Come on, it is a cereal with raisins- a naturally sweet food-why are you adding more sugar?!
Whatev. I'm over it... (not really)

But anyways - 
This is what the Raisin Bran looks like...

Not huge flakes like you may be expecting-smaller, but still delicious, don't get me wrong!


I added some blueberries on top and devoured that bowl!

So it's no secret I love their Raisin Bran, but what about the others?
Well, the Erewhon Crispy Rice got thrown into my Peanut Butter Granola recipe - and boy oh boy was it a success! Try it for yourself, you won't be sorry!

And the Uncle Sam Original? GREAT!
It had a neutral flavor that allows for you to add whatever kinds of mix-in's you want and have your bowl of cereal perfectly match your taste!
(I enjoy slices of bananas and using strawberry milk, crazy maybe-delicious yes.)

So that's that! 
I'm loving me some Attune Food cereal!
They make delicious products, with minimal-but wholesome ingredients that you can feel good about putting in your body.
No preservatives, no artificial anything, no harm, all yum!

Grilled PPB&J - Pear, Peanut Butter & Jelly

How did I pump up the power on a grilled pb&j? 
Well thanks for asking! 
...I added a pear! That's how :)

Two slices bread...
Cover with peanut butter and homemade strawberry jelly

Cover with a thinly sliced pear
Put bread together, spray both sides with nonstick cooking spray and grill

Slice and Enjoy!

Fruit Salsa



Dipping stuff is so much fun! Don't cha think? 

Well this fruit salsa is a very versatile dipper! It's amazing with salty dippers such as pretzel things, bagel things, salty crackers, heck-even chips! But super amazing as a double sweet dip/dipper combo with carrying vessels such as cinna-sugar tortilla chips. graham crackers or even slices of fruit! (Fruit overload?! Sorry, never heard of it...)

This recipe also couldn't get much easier-just chop/puree all the ingredients and let it chill for awhile and you're in business! (the dipping business that is!)






That's really it! Just take all your ingredients and throw it all in a big bag and shake shake shake! 

Ingredients: 
*be aware-these ingredients are just my favorite combo-you can switch it up however you wish!
-2 apples (I like using the very sweet Fuji variety)-chopped
-2 kiwi-peeled and chopped
-1 lb. strawberries-chopped
-2 TBSP sugar (or any sweetener of choice)
-2 TBSP. fruit preserves
-1/4 cup fruit juice of choice 

~I've done this before with raspberries instead of strawberries, and once with pineapple juice and pineapple instead of apples-YUM!

Perfect for your next girls movie night! Tailgate! Playdate! Party... lazy night at home! Anything :)

Delicious on crackers!

Strawberry Nutella Muffins



I'm not really all that into chocolate... I know, I know-many of you probably think this should be considered a sin! But I just can't help it... chocolate has never really been one of my favorite things, but the weird thing is-I love to create food with chocolate! I don't really understand it either-but chocolate creations are just so, what's the word? Pretty...artistic...MAGICAL! They're magical! So time and time again, I find myself creating some treat that I turns out beautifully and people love... but I can't stand more than one bite of!

Oh well, at least all you chocolate lovers out there can benefit from my recipe! :) So without further adu...

Ingredients:

1 1/2 cups all-purpose flour (whole wheat would work exceptionally well also to make these a bit healthier!)
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup sugar
1/4 cup applesauce (can use oil if you feel the need)
1 large egg
1/3 cup skim milk (or buttermilk)
1 teaspoon vanilla extract
1 cup chopped fresh strawberries-washed and diced into small chunks
1/3 cup Nutella - softened in the microwave





and Viola! Enjoy!!!


Directions:
1. Preheat oven to the standard 350* and grease your muffin tins, or use baking liners... whatever floats your strawberry nutella muffin boat!
2. Mix together all ingredients up to strawberries in a nice big bowl-only until everything is moistened ...don't go too overboard with your mixing!
3. Now you can go ahead and fold in those strawberries
4. Fill your muffin tins 1/2 full of muffin batter, then add a dollop of Nutella, and cover with muffin batter until about 3/4 full-I got about 12 muffins, but this will vary depending on your muffin tin size
5. Bake until they pass the infamous toothpick test! (about 15 minutes for those of you with no access to a toothpick or anything that vaguely resembles one)

CheeseShake


If you can't tell, I've been in the mood for all things cheesecake these past few days! I decided to take my obsessive love to the next level and make a drinkable cheesecake or sorts...yes you read correctly! I'm going to give you my recipe for a CheeseShake! Excuse me while I drool.....

Alright, I'm back! Here we go...

Ingredients:
-6 ounces light yogurt (I like to use Dannon Light n' Fit's vanilla in this recipe but any should work!)
     ~Be sure to freeze this a few hours before making this CheeseShake
-1/2 cup milk
-2 TBSP. sugar free cheesecake pudding mix
-4-6 Strawberries (frozen)
-Fat free whipped topping (not necessary per se, but oh so fun!)

Directions:
1. Throw everything in the blender (except whipped topping!) and blend
2. Add additional frozen strawberries if needed to reach desired thickness
3. Top with whipped topping!
