Psalm 48:14

"For this is God. Our God forever and ever. He will be our guide - even unto death" -Psalm 48:14

What better person is there to follow than the One who created the very path we walk upon?

Listen to Him and your path will be made straight.

Even though it may sometimes seem as though you are wandering in circles, God has a plan for each and every one of us. And asking Him to guide you, with a sincere heart, will always be heard. He is there every step of the way, even when times get tough, paths wide and curve, may seem like a dead end at some points... God is there.

Have faith. Have trust. Be strong. Be courageous.

"Trust in the Lord with all your heart. And lean not on your own understanding, in all your ways acknowledge Him. And He will make your path straight." -Proverbs 3:5-6

Holy Guacamole

Holy Guacamole! 

This isn't a just a phrase I use sometimes entirely too much-it's also the newest recipe I'm about to share with you guys! 

This guacamole got its name for two reasons:
1. It's so good you'll be saying "Holy Guacamole!"
and
2. It is extremely healthy and good for you - earning a 'halo' in the health department!

Here are all the ingredients you need... The secret ingredient is the zucchini. It has a completely neutral flavor and takes on whatever flavors you pair with it. This makes it perfect for a guacamole dip-it will have all the flavors of the avocado and other spices we put with it but only has a fraction of the calories and fat (albiet - those are good for you fats). 

The process is pretty easy - 
1. Wash zucchini and onion and puree in food processor. 
2. Cut the avocado in half, remove pit (but save it!) and scoop out the avocado goodness!
3. Put the avocado in the food processor with the onion and zucchini, add your other spices and lemon juice-puree until smooth
4. Pour your guacamole into a dish and add your pit - this sounds crazy but it helps keep the guacamole from turning brown
5. Enjoy with anything and everything! Chips, veggies, crackers, as a spread on bread for a fun sandwich.

Grilled Pizza

Even though summer is almost over... (tear) we still have a few more days to fire up our grill and head outside to make a delicious dinner! 

So what should we do to celebrate our last few days of summer? Grill pizza! 









It's very simple! 

1. Just make your pizza dough-or buy from store... then prepare your veggies by adding a little bit of oil or salad dressing to the pre-choped veggies and throw in a grill basket. 
2. Season the veggies with some salt, pepper, and whatever spices you like!
3. Grill veggies for about 10 minutes before throwing your rolled out pizza dough on the grill.
4. Let the pizza dough grill for a few minutes on each side
5. Remove dough and veggies and take back inside to prepare pizzas!
6. Fill pizzas as you like... sauce, veggies, meat, cheese, etc.
7. Throw back on the grill for 3-5 minutes-or until cheese is melty!

Zucchini Chips

Am I the only one that still has a gazillion zucchini plants left from this summer's harvest?
Anyone?
Anyone?

Well I do! And if anybody else out there does as well-I have the perfect recipe for you!

These zucchini chips are delicious, out-of-this-world nutritious! not to mention an amazing use for all those pesky zucchini slowly rotting in your basement.

They take only 2 ingredients and are even easier than yesterday's recipe for apple chips (if you can believe that!)

Ingredients:
-Zucchini
-Seasoning Salt (to make these low in sodium I use Mrs. Dash salt-free seasonings)



Directions:

1. Wash zucchini thoroughly
2. Cut off ends about 1/2 inch inch
3. Slice zucchini thinly with a mandolin (about 1/4 inch)
-or you can cut thinly with a knife
4. Lay in a single layer on the dehydrator sheets
5. Sprinkly generously with seasonings
6. Let dehydrate for about 8 hours on 145*
